Ingredients:

Serves 4

Preparation time: 30 minutes

 

2 green apples

2 red apples

2 tbsp lemon juice

2 cucumbers, sliced thinly

1/2- cabbage, shredded

1 cup strawberries, halved

1/2-cup groundnuts, crushed

1/2- cup raisins

1 cup mayonnaise

4 slices watermelon

 

Method:

1. Quarter the apples, remove the seeds and middle section. Core and cut into pieces. Place in a bowl and sprinkle with the lemon juice to prevent discolouration.

2. Add the cucumbers, cabbage, strawberries, groundnuts and raisins. Mix well.

3. Pour in the mayonnaise and toss well until all the ingredients are coated.

4. Line a salad dish with the watermelon. Spoon the salad onto the dish and serve immediately.

 

Cooking tips:

  •     Instead of mayonnaise, dress the salad with plain yogurt mixed with honey.

  •     Add extra nuttiness and intensity by including crushed walnuts and almonds.

  •     Chill the salad for 30 minutes before serving as a cool hot weather starter.
