Cake, banana and mango custard

Cake and custard is a favourite dessert that takes just a few minutes to whip up.

Create a nutritious dessert or breakfast meal by using a combination of fruits in season. The addition of mango and banana will provide you with a filling and tasty experience. 

Ingredients:

Serves 4

Preparation time: 20 minutes

2 tbsps custard powder

1 litre milk

1 tbsp sugar

2 bananas, sliced

2 mangos, diced

4 slices vanilla cake

½-tsp cocoa powder to garnish

 

Method:

1. In a cup, mix the custard powder with water until fully absorbed. Heat the milk over low heat in a saucepan until it bubbles slightly.

2. Add the custard powder mixture to the milk and cook for five minutes, or until it thickens while stirring briskly. Remove from heat and add the sugar.

3. In a serving plate, add the sliced bananas, mangos and cake. Pour the custard over the cake and fruit.

4. Sprinkle the custard with cocoa powder and serve immediately.

 

Cooking tips:

• Do not add sugar to the custard before it thickens as doing so will prevent it from thickening.

• Ensure that you stir the custard thoroughly as soon as you place it in the milk to help prevent lumps from forming.

• Cook the custard for less than 5 minutes to prevent it from burning.

• For variation, you may sprinkle the custard with a few raisins prior to serving it.
