You can easily prepare your own sauces and condiments to add to your cooking. They give a whole new fresh taste and feeling to your meals and can be added to most dishes. You can use them in stews and vegetables for that extra zest. Lemon condiment is a Moroccan specialty used to flavour beef and chicken stew.

Preparation time: 30 minutes

 

INGREDIENTS:

12 medium sized yellow lemons

1 orange

1 inch ginger root

2 cloves garlic

1 tsp black pepper

1 tsp cinnamon

1 tsp cumin seeds

1/2- tbsp salt

3 cups hot water.

 

METHOD:

1. Wash, chop and deseed the lemons and orange. Peel and slice the ginger root and garlic.

2. In a bowl, add the the lemons, orange, ginger and garlic. Add the black pepper, cinnamon and cumin seeds and mix well.

3. Dissolve the salt in the hot water and pour it into a large clean jar. Add the mixture and allow it to settle for at least two days before using. 

Cooking tips:

  • How to use the condiment

  • Remove two tablespoons of the lemon mixture and add to stews as they cook. Remove the rind before serving.

  • If you prefer a slightly hot condiment, you may add 1/2-tsp of cayenne pepper and nutmeg.

  • Add a spoonful of sugar to create a rich sweet and sour flavouring.
