Fresh fruits and nuts medley

What you need to know:

• To prevent fruits such as bananas and apples from darkening after being peeled, dip them in lemon or orange juice.

• Marinate fresh fruit in sweet red wine for one hour for a gourmet touch and taste.

• Always peel and cut fruit with a stainless steel knife to prevent discolouration. Cut fruit on a separate chopping board from the one used for vegetables such as onions to prevent cross flavouring.

Ingredients:

Preparation time: 20 minutes

Serves 2-4

1 apple, cored and sliced

3 purple passion fruits

1 large ripe mango, peeled and diced into large cubes

1 Kampala banana, sliced

3 watermelon triangles

4 tree tomatoes, sliced

1 tbsp cashew nuts mixed with raisins

½-cup vanilla yoghurt

 

Method:

1. Wash fruits carefully before slicing and dicing. On a large attractive platter, arrange the fruits artistically in the following order:  Place the apple slices at the corners. Make a circle with mango cubes and place passion fruit slices at the centre .

2. Place the watermelon triangles facing upwards in between the apples and put the tree tomatoes in between them. Place the banana slices  over all the fruits, except the tree tomatoes as the red colour will stain the white bananas.

3. Sprinkle with cashew nuts and raisins and spoon the yoghurt all over. Serve immediately.
