Pork and noodles stir-fry

Noodles.

What you need to know:

  • Heat a wok or a deep frying pan and add the oil. Fry the pork over high heat until golden brown and crispy. Remove from fire.

Noodles are a staple food in Chinese cuisine. They are also common in most local households because they are easy to prepare and can make for a delicious meal at a short notice.

Do not use instant noodles to prepare Chinese food. Use dried noodles especially for Chinese cooking.

Preparation time:  30 minutes

Serves 4-6

 

Ingredients:

300 gms noodles

2 tbsps vegetable oil for frying

250 gms pork, cut into small pieces

2 cloves garlic, crushed

2 tbsps curry powder

1 medium onion, sliced

100 gms French beans, sliced

1 tbsp dark soy sauce

1 tsp sesame oil

2 tbsps chopped dhania

 

Method:

1. Soak the dried noodles in water for 20 minutes to soften. Boil for 8 minutes, drain and put aside.

2. Heat a wok or a deep frying pan and add the oil. Fry the pork over high heat until golden brown and crispy. Remove from fire.

3. Add more oil to the pan and fry the garlic and curry powder for 2 minutes. Add the onions and French beans and fry for five minutes, until the beans soften.

4. Return the pork pieces to the pan with the French beans add 1/8-cup water and fry for 3 minutes more while mixing thoroughly. Ensure that the pork and French beans are cooked thoroughly. Add the drained noodles, soy sauce, sesame oil, dhania and mix gently. Serve hot.

 

Cooking Tip.

• There are wide varieties of noodles to choose from. The most widely available and commonly used for Chinese dishes outside China are egg noodles. These are made from eggs and wheat flour and should be soaked briefly and boiled before use. For best results, select medium thick ones.
