Spaghetti with creamy herb and vodka sauce

  • Prevent your spaghetti from sticking together as it cooks by ensuring that you use a large saucepan to boil it.

Ingredients:

2 tbsps salted butter

1 onion, thinly sliced

4 cloves garlic, crushed

1 tbsp dried thyme

1 tbsp dried tarragon

1 tbsp dried basil

1 tbsp fresh dhania

1 cup cream

½ cup vodka

300 grams spaghetti, cooked

½ cup grated cheese

Black pepper and salt to taste.

 

Method

1. In a heavy saucepan, melt the butter over medium heat. Add the onion and garlic and cook until slightly brown and tender. Add the thyme, tarragon, basil and dhania and fry while stirring for one minute.

2. Add the cream and vodka and simmer until sauce thickens over low heat while stirring for 8 to 10 minutes.

3. Add the cooked spaghetti and cheese and toss until the sauce coats the spaghetti well. Season with black pepper and salt. Serve hot with roast chicken or fried meat.

 

Cooking tips

• Ensure that you cook the vodka for a full 8 minutes to evaporate the alcohol.

• To vary the flavour, you may add chilli oil and fried tomatoes cooked in olive oil.
